What could be better than waking up to a treat… Today I want to offer you delicious muffins for those with a sweet tooth, with a really delicious chocolate cream topping, and besides being chocolate-flavored, they have a truly delightful glaze on top.
I will also give you the variations for those who want to make them a little healthier.

- 1 cup all-purpose flour (or whole wheat)
- 3 eggs
- 3 tbsp unsweetened cocoa powder
- 1.41 oz erythritol (or 3 tbsp honey)
- 3 tbsp water
- Half packet baking powder
- 2.65 oz dark chocolate 60-69%
- 1.06 oz erythritol (or 0.18 cup sugar)
- 0.25 cup water
- to taste almond slivers (or others as desired)

Diet Chocolate Muffin Recipe
In a bowl, beat the eggs with the whisk at low speed for about 3 minutes.
Then add the flour, baking powder, sweetener or honey, water, cocoa, and mix with the whisk at low speed.
Once a homogeneous mixture is obtained, pour the batter into muffin cups. If you don’t have muffin cups, aluminum ones greased with butter are fine.
The important thing is to leave 1 cm (about 0.5 inches) free from the edge because the muffins rise during baking.
Bake in a static and preheated oven at 350°F for about 20 minutes. Check during the last minutes of baking with a toothpick because baking times vary from oven to oven.
As soon as they are cooked, let them cool and meanwhile prepare the glaze
Put the sweetener or sugar and cold water in a saucepan:
Cook for a few minutes, stirring continuously until everything is dissolved, then turn off the heat.
Chop the chocolate into pieces and take another pan to melt it in a bain-marie or microwave.
Then pour it into the bowl with the mixture of water and sweetener or sugar, and mix from bottom to top with a whisk to incorporate everything.

Place the eggs in the Thermomix bowl, insert the butterfly and beat for 3 minutes at speed 3 with the lid on.
After the time has elapsed, keep the butterfly spinning at speed 3, and slowly add through the lid opening: the flour, cocoa, baking powder, sweetener or sugar or honey according to your taste.

Put the chocolate pieces and sweetener in the Thermomix bowl. Chop for 10 sec. speed 5. Gather with the spatula, and add the sweetener or sugar and cold water. 3 min. at 140°F speed 1.
