Diet Chocolate Salami. Traditional and Thermomix Recipe.

Today I give you a “bomb” recipe. Who said that those on a diet can’t indulge in some little treats? Indeed, without sugars but lots of fiber and plenty of protein.

I will give you the option to use low-carb cookies for those on a Mediterranean diet, and also instructions for those on a ketogenic diet with the keto cookies variant

I have transformed a classic recipe of Italian pastry into a diet-friendly dessert that is still delicious and rivals the classic recipe.

  • 5.3 oz Digestive biscuits (or fiber-rich or ketogenic)
  • 3.5 oz almonds (or walnuts or hazelnuts or both)
  • 3.5 oz dark chocolate 60-69%
  • 1.4 oz erythritol
  • 0.52 cup 0% fat Greek yogurt
  • 3 egg yolks

Here’s what we need to make the

  • 1 Cutting board
  • 1 Chopper
  • Parchment paper
  • 1 Refrigerator

Steps

Traditional Preparation

  • Place the biscuits in your food processor and coarsely chop them: Transfer to a bowl and set aside.

  • Now place the nuts in the processor and chop, leaving visible pieces. Transfer to the bowl with the biscuits and set aside. You can also use granules.

  • Roughly chop the chocolate, place it in a microwave-safe glass bowl with the sweetener and melt.

  • Now add the Greek yogurt and mix.

    Once the mixture has cooled a bit, you can add the yolks and mix vigorously

  • At this point, add the nuts and biscuits, and mix well with a spatula. Spread a sheet of parchment paper on a kitchen surface and place the mixture, flatten it with a spatula.

  • Then roll it up into the shape of a salami, twist the ends of the sheet like a candy

    Let the salami cool in the refrigerator until it becomes solid.

  • Place the chocolate pieces in the bowl and chop: 4 sec/speed 7.

    Melt the chocolate: 3 min/122°F/speed 1.

  • Add the sweetener, yogurt, yolks and mix: 30 sec/speed 4.

    Add the nuts and biscuits and mix well: 30 sec/anti-clockwise/speed 3 with the spatula.

  • Remove the dough from the bowl, place it on a sheet of parchment paper, and flatten it with the spatula.
