  • 2/3 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup erythritol (or 1/2 cup sugar or 3 tbsp Stevia)
  • 1 1/8 cup low-fat milk (or plant-based milk)
  • 1/2 cup Greek yogurt 0% fat (or plant-based)
  • 1 packet baking powder
  • 2 tsp orange zest
  • 1 pinch salt

Steps

Preparation in Bowl

  • In a large bowl, add the all-purpose flour and coconut flour, mix, then add the baking powder and cocoa powder. Also add the sweetener (or sugar) and a pinch of salt.

  • Pour in the milk and gradually add it to the dry ingredients while mixing with an electric whisk. After the milk, add the yogurt, gradually and continue mixing.

  • Pour it into a 9.5-inch diameter bundt pan previously greased and floured or lined with parchment paper.
    Bake in a static oven, preheated at 356°F, for 35-40 minutes.

  • At the end of baking, check with a toothpick test. Remove the cake from the oven and let it cool on a rack, then gently unmold it.

  • Insert the butterfly whisk into the Thermomix bowl, then add the 2 flours, the baking powder, the cocoa powder, the sweetener, a pinch of salt, and the milk. Mix for 3 min. at speed 3.

    Then add the yogurt, gradually, still with the butterfly whisk for 2 min at speed 3.

  • Finally add the finely grated orange zest for 1 min. at speed 2. Remove the butterfly whisk.

    Pour the mixture into a 9.5-inch diameter bundt pan previously greased and floured or lined with parchment paper.
