- 2 tbsps stevia (or 1/3 cup erythritol or 1/3 cup cane sugar)
- 1/2 cup partially skimmed milk
- 2 oz Greek yogurt 0% fat
- 1 packet vanillin
- Half packet baking powder for desserts

Preparation: Diet muffins without butter or eggs
With a whisk
Combine sweetener and/or sugar, vanillin, baking powder, and flour, mixing the various compounds together;
Pour milk into a bowl with vanillin, and add Greek yogurt, and mix.
Then, with the help of a sieve, combine the powders, mixing with a whisk or spatula vigorously, avoiding lumps;
Place the batter in the appropriate muffin tin and bake at 350°F for 20 minutes.
Important: check the cooking with the usual toothpick method.
Combine in the bowl, sweetener and/or sugar, vanillin, baking powder, and flour,
Pour milk, vanillin, and Greek yogurt.
Mix for 3 min, speed 4.
Place the batter in the appropriate muffin tin and bake at 350°F for 20 minutes.
Important: check the cooking with the usual toothpick method.
Here’s how I make diet muffins without butter or eggs
For air fryer cooking, preheat, insert the muffin tin, and set oven mode at 350°F for 15 minutes
Chocolate-filled muffins: using the basic recipe, you can place pieces of dark chocolate in the center of the batter in each mold.
With redcurrant heart: using the basic recipe, you can place small redcurrant berries in the middle of the batter in each mold.
With chocolate flakes or hazelnut granules, to be sprinkled on top of the batter in the measure of one teaspoon each.
To make them with cocoa, just replace 1/4 cup of flour with 1/4 cup of unsweetened cocoa.
