  • 1 cup Greek yogurt 0% fat
  • 10.6 oz fresh clementines, peeled (or mandarins or oranges, weighed peeled)
  • 0.5 oz fresh clementines, peel (or mandarins or oranges)
  • 3 large eggs
  • 1 1/3 cup all-purpose flour (Or low G.I like FiberPasta)
  • 1 package baking powder
  • 3/4 cup sugar (Or 200 g erythritol or 60 g stevia)

  • Stand Mixer I use Bimby
  • 1 Cake Pan ring – diameter 8.7 inches
  • 1 Cooling Rack
  • Bowl
  • Brush
  • Grater

Preparation: Diet Ring Cake with Clementine Smoothie

For all preparations

  • Take a ring cake pan (Ø 9.5 inches), butter, and flour the base.

    Turn on the oven and preheat

    to 350°F static.

  • Peel and blend 10.6 oz of clementines and divide the smoothie into 2 parts.

    Grate the peel of the clementines, obtaining about 1 oz of zest.

  • In a bowl or your mixer, put the clementine zest, sweetener or sugar according to your needs, Greek yogurt, flour, baking powder, and 5.3 oz of clementine smoothie.

  • Mix the mixture until it is well blended.

    Skip the Bimby part and proceed to the cooking for both preparations

  • Blend 10.6 oz of clementines for 20 sec. speed 10.

    The obtained smoothie should be divided in half.

  • Put in the bowl the grated clementine peel with the sweetener or sugar, mix: 5 sec./speed 4.

  • Add yogurt, eggs, all-purpose flour, baking powder, and 5.3 oz of clementine smoothie, knead: 30 sec./speed 5.

    Baking for both preparations
  • Take the cake mold again, the ring cake pan, and pour the batter.

    Bake in a hot oven for 40-45 minutes (350°F) static.

  • After the time has passed, do the skewer test, then carefully remove the cake from the oven, unmold, place it on a cooling rack, and place everything on a large bowl.

  • Let it cool at room temperature.

    When the ring cake has cooled down, gently pour the smoothie and wait 2-3 minutes.

  • Repeat the operation until all the smoothie collected in the bowl under the rack is completely absorbed by the ring cake.

  • Let it cool completely.

    At the end of the preparation, decorate with clementine slices.
