Diet yogurt mayonnaise
It’s a creamy, delicate protein-based sauce, perfect for serving with fresh vegetables or fries, homemade chicken patties (spinacine) or vegetable burgers: zucchini patties or eggplant burgers, pumpkin patties, or swordfish patties, etc.
How to prepare Diet Yogurt Mayonnaise
Making this light mayonnaise is really simple and quick: you just need 4 hard-boiled egg yolks, Greek yogurt, a pinch of salt, lemon juice (or apple cider vinegar) and one teaspoon of curry.

What we need to make it
- 1 Small saucepan
- 1 Bowl
- 1 Immersion blender
Steps
Let’s go to the kitchen
Boil the eggs, peel them, cut them in half and remove the yolks, placing them in a bowl.
Then add the Greek yogurt, a pinch of salt, the curry, and finally the lemon juice.
Now just mash everything with a fork and then…
blend everything with the immersion blender, moving it slowly from the bottom up. In no time we’ll have the Diet Yogurt Mayonnaise.
Instead of lemon juice, if you prefer, you can use the same quantity of apple cider vinegar; the sauce will still be velvety and delicious.

Storage and tips
Diet Yogurt Mayonnaise
Storage
My recommendation is to consume the mayonnaise immediately, or store it in the refrigerator in a sealed glass jar for a maximum of two days.
Tips
Plain Greek yogurt is a perfect substitute for oil to make this sauce, making it very light — ideal for those who want to eat lightly without sacrificing flavor.
For best taste, it is advisable to keep it in the fridge for a few hours before using.
