- 1 bunch parsley (chopped)
- 1 oz pecorino romano (grated)
- to taste mint

Preparation of Double-Cooked Zucchini Balls
Cut the zucchini into cubes.
Place them on a baking tray lined with parchment paper, and season with salt, pepper, olive oil, and oregano, then bake for 20 minutes in a ventilated oven at 375°F. The same instructions apply for the air fryer.

Knead and let rest for 10 minutes.
This allows the breadcrumbs to absorb well.
After resting, moisten your hands and form small balls.
Now decide whether to cook in a pan, oven, or air fryer.
Pan cooking: add a whole garlic clove and some olive oil, heat it
When hot, fry the balls for three minutes on each side.
Serve with plenty of mint.
