  • 2 eggs
  • 1 1/2 cups breadcrumbs
  • 1 clove garlic (minced)
  • 1 bunch parsley (chopped)
  • 1 oz pecorino romano (grated)
  • to taste mint
  • to taste salt
  • to taste olive oil
  • to taste pepper

Preparation of Double-Cooked Zucchini Balls

  • Cut the zucchini into cubes.

    Place them on a baking tray lined with parchment paper, and season with salt, pepper, olive oil, and oregano, then bake for 20 minutes in a ventilated oven at 375°F. The same instructions apply for the air fryer.

  • Once cooked, transfer them to the food processor bowl with 2 sprigs of mint. Blend…



  • After blending, pour the mixture into a bowl, add the eggs, the seasoned breadcrumbs with finely chopped garlic and parsley, grated pecorino romano, salt, and pepper according to your taste.

  • Knead and let rest for 10 minutes.

    This allows the breadcrumbs to absorb well.

  • After resting, moisten your hands and form small balls.

  • Now decide whether to cook in a pan, oven, or air fryer.

    Pan cooking: add a whole garlic clove and some olive oil, heat it

  • When hot, fry the balls for three minutes on each side.

  • Serve with plenty of mint.

  • For oven cooking, preheat to 375°F ventilated, place the balls on a tray with parchment paper, and bake for 10 minutes.

You can store the raw mixture in the fridge covered for 2 days. The finished dish can last for 3 days.
