An excellent vegetarian main course, it’s the modern version of eggplant meatballs, a must-have dish of traditional Sicilian cuisine.

Suitable for our kids who do not like vegetables, and for this very reason, I gave it a more succulent touch on top, making them look like small pizzas.

In fact, I was really indecisive about whether to call this dish small eggplant pizzas, but then I changed my mind to the name Burger to attract more young people.

Whether in summer or winter, you can enjoy them cooked in a classic oven or in a microwave with the crisp mode

Ingredients

  • 14 oz eggplant
  • 1 egg
  • 3.5 oz scamorza cheese
  • 3.5 oz breadcrumbs (seasoned Sicilian style, see recipe)
  • 2 tomatoes (ripe)
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil (for brushing)
  • to taste oregano

  • 1 Non-stick baking pan
  • 1 Oven

Steps

  • Cut the eggplants into cubes with the skin on.

    Spread them out on a baking tray lined with baking paper. Season with salt, pepper to taste, oregano to taste, and a drizzle of extra virgin olive oil.

  • bake at 356°F (180°C) with fan for 20 minutes.

  • Or microwave on crisp mode for 15 minutes

  • Once they’re cooked and cooled, place them on a cutting board and chop them with a knife, forming a mince
    Transfer them to a bowl, with the egg,

  • the Sicilian-style seasoned breadcrumbs, and mix

  • Form 4 balls, grease a baking tray with a little extra virgin olive oil, and place the balls on it.


  • cut the scamorza cheese into cubes, and place the cubes on each ball.

  • Press the ball with your hand, forming the burger.

  • Cut a tomato into pieces, and place it on top of the scamorza cheese, like a pizza.

  • Bake in a preheated fan oven for another 10 minutes, or in the microwave on crisp mode for 5 minutes.

  • If you don’t want to turn on the oven, but want to cook the burgers in a pan, don’t immediately add the scamorza cheese and the tomato pieces, but cook the burgers on one side for 3 minutes, then flip them and…

  • Only after doing so, add the scamorza cheese and the tomato pieces. Finish cooking with a lid and on low heat, until the scamorza cheese has melted.
