Eggplant Mini Pizzas

Eggplant mini pizzas, baked or air-fried.
Today’s recipe is vegetarian.
It’s a dish that can be made either in the oven or in a good air fryer with the same delicious result.
In this recipe, as you will see, I do not salt the eggplants, making it much simpler and faster to prepare.
You can prepare them in advance because they taste great at room temperature.
The king and star of the recipe is the seasoned Sicilian-style breadcrumbs.
