Eggplants with Mediterranean flavors, either baked or cooked in an air fryer

Ingredients
- 2 eggplants (medium)
- 3 cloves garlic
- dried oregano
- 3 sprigs mint
- sprigs lemon thyme
- 4 leaves basil
- salt
- pepper (ground)
- 2 tablespoons extra virgin olive oil

Preparation of Eggplants with Mediterranean Flavors
Wash the eggplants, remove the stem, and then cut them in half.
With a sharp knife, make incisions all the way through, but be careful not to cut through. Then place them on a non-stick baking tray.
Use your fingers to open the slits and add a pinch of salt inside.

Brush the eggplants.
Preheat the oven to 392°F (200°C) with fan and place the tray at mid-height.
Bake for 20 minutes. Then turn off the oven and let them rest inside for another 10 minutes. Take them out and let them cool.
In an air fryer, after preheating, cook at 374°F (190°C) for 15 minutes, and turn them halfway.
When the eggplants have cooled, peel the garlic and slice it.
