As good as the famous pasta dish, this pizza embodies all the Italian tradition transformed from a pasta dish to pizza. Suitable for all ages, you can also add a bit of chili pepper if you like.

  • 5 oz guanciale (or pancetta)
  • 2/3 cup water
  • 2 teaspoons sugar
  • 0.7 oz fresh baker's yeast
  • 10.6 oz all-purpose flour
  • 0.7 oz extra virgin olive oil
  • Half teaspoon salt

Preparation: Family Tray Pizza Amatriciana Style

Traditional preparation

  • Lightly grease a large bowl and set aside.

  • Place the slightly warmed water, sugar, and yeast in the mixer bowl, stir until the yeast dissolves

    If kneading by hand, do it in a rather large bowl.

  • Add the all-purpose flour, extra virgin olive oil, and salt, and knead.

    Place the dough in the prepared bowl, cover with plastic wrap (or a damp tea towel) and let it rise away from drafts until it doubles in volume (at least 1 hour)

  • If you want to knead in advance, you can place the well-covered bowl in the fridge for the time you need and proceed with the rising afterwards.

    If you do this, the rising should be an hour longer.

  • Preheat the oven to 482°F. Line the oven tray with parchment paper or grease it with a drizzle of extra virgin olive oil.

    Chop the mozzarella and let it drain.

  • Place the risen dough on the prepared tray. Using your fingertips, stretch the dough into a round shape, about 20-24 inches in diameter.

    Spread the tomato puree over the dough, then add the pancetta or guanciale.

  • Season with salt and extra virgin olive oil to taste and bake in a hot oven for 12 minutes (482°F). Remove carefully from the oven and..

  • Scatter the ricotta here and there, and top with mozzarella.

    Turn off the oven and put the pizza back inside, so the residual heat melts the cheeses.

  • Serve immediately, garnished with some fresh basil leaves and a little chili pepper depending on your taste.
