Fish Medallions and Gratinated Vegetables

Fish medallions and gratinated vegetables.
Another trick to make a single dish by pairing the fish with the fibers of tomatoes and zucchini, and the carbohydrates of potatoes.
For this dish, you can use any fish cut, such as tuna, swordfish, or imperial needlefish, which is exactly what I used.

We will cook our medallions in the oven or in an air fryer.
