Baked fish rolls with cherry tomatoes cooked in the oven or air fryer.
This is an old recipe I learned as a girl from my mother-in-law, who truly was a great teacher.

For this recipe, I used horse mackerel, but you can use any fish you like, and by following the video below, I will show you how to fillet the fish.
In the absence of fresh fish, you can use frozen fish fillets, the important thing is to let them drain for a few hours after thawing.

Ingredients
- 2.2 lbs horse mackerel (or other filleted fish)
- 2 cups breadcrumbs (Sicilian seasoned)
- 3 tbsp extra virgin olive oil
- A few pinches pepper

- 2 cloves garlic
- 1 bunch chopped parsley
- 10 oz tomatoes (ripe)
- 3 tbsp extra virgin olive oil

Steps
Choose good fresh fish, alternatively frozen fillets are also fine.
If you buy the whole fish, follow the embedded video in the recipe and fillet it. In this case, to adjust, the quantity should be about double that required in the recipe
From each specimen, you will obtain 4 long and somewhat tall fillets that you need to widen with the knife, slicing along the length laterally without reaching the end, then open it gently.
If you don’t know how to fillet them, ask your trusted fishmonger to do it.
Once filleted, the fillets should be placed on a work surface, and covered with plastic wrap. Then take a meat tenderizer, and, very gently give a few taps to widen them, but be careful “very” gently, otherwise you risk tearing the fillet
Prepare the Sicilian Breadcrumbs as described in this link
Add 2 tablespoons of oil and about 1/4 cup of water.
Knead until you form a rather soft mixture, if it still seems dry you can add more oil and water.
Place the fish fillets on a surface.
Put a little stuffing on each fillet, and press it lightly with your hands, this way it will be easier to roll them up.
Form rolls, and secure them with a wooden skewer.
Place the filled skewers in a baking tray, and we will prepare the dressing with which we will immerse them
In a pan, put 3 tbsp of extra virgin olive oil, and heat it up. Then add 2 chopped garlic cloves and a little parsley.
Let it saute, and add the chopped cherry tomatoes.
Adjust salt and pepper and add a glass of water.
Pour this sauce as it is over the skewers and put the baking tray in a preheated oven at 356°F static, and bake for 15 minutes

For air fryer cooking, preheat the basket and then cook at 356°F for 6 minutes.
