Baked or air-fried frittata with curly endive
This is a very simple, tasty, and economical dish.
The recipe I propose is also diet-friendly, so if you want to eat well while taking care of your health, it won’t cost you any sacrifice. I didn’t use any type of oil in the cooking process.
This vegetable is very low in fats and proteins, yet rich in water and minerals, and it also contains many fibers and vitamins, especially A, C, and K.
It aids digestive and intestinal function, and prevents cholesterol.

- 2/3 cup Grana Padano PDO (grated)

- 1 clove garlic (minced)

Preparation of the Baked Frittata with Curly Endive
Wash the curly endive very well; I recommend filling the sink and, without cutting it, dunk it up and down several times by holding it by the base, changing the water until it turns clear. Then, remove the bottom part.
Put salted water in a pot and bring it to a boil.
When it boils, add the endive, and cook for just 4 minutes. Meanwhile, prepare a bowl with cold water and ice.
After the time is up, drain it and …
Cool it quickly in the cold water with ice. This will stop the cooking, keep the bright green color, and remove some bitterness.
Once cooled, squeeze it, and cut it into pieces.
Wash and chop the parsley, peel and mince the garlic, and cut the tomatoes into pieces.
Now, put the chopped and squeezed endive in a bowl, add the eggs, salt, and pepper to your taste, and the grated Grana Padano.
Mix everything.
In a baking tray, wet and wring out a sheet of parchment paper; this operation helps it adhere better.
and pour the entire mixture in, and finally decorate with the tomato pieces.
Cook in a fan oven at 356°F (180°C) for 15 minutes, or static at 374°F (190°C) for the same time.
Once the time is up, open the oven door, but let it rest inside for another 5 minutes.
Gently remove the parchment paper, and serve at room temperature.

For air fryer cooking
preheat the air fryer, then cook for 5 minutes at 356°F (180°C).
At the end of cooking, let the frittata rest in the drawer until slightly warm.
