Baked Frittata with Curly Endive or in Air Fryer


This is a very simple dish to make, very tasty and economical.
The recipe I propose is also dietetic, so if you want to eat well, and at the same time eat deliciously, it won’t cost you any sacrifice. I didn’t use any kind of oil in the cooking.
This vegetable has very few fats and proteins, but it’s rich in water and minerals and also has a lot of fiber and vitamins, especially A, C, and K.
It helps the digestive and intestinal system, prevents cholesterol.

  • 7 oz curly endive
  • 5 cherry tomatoes (ripe)
  • 3/4 oz Grana Padano PDO (grated)
  • to taste parsley
  • 1 clove garlic (minced)
  • to taste salt
  • to taste pepper

Preparation of the Baked Frittata with Curly Endive

  • Wash the curly endive very well, I recommend filling the sink and, without cutting it, move it up and down several times, changing the water until it’s clean. Then remove the final part.

  • Put salted water in a pot and bring it to a boil.

    When it boils, put the endive in and cook it for only 4 minutes, meanwhile prepare a bowl with cold water and ice.

  • After the time has passed, drain it and …

  • Quickly cool it in cold water with ice. This will stop the cooking, keep the bright green color, and remove some bitterness.

  • As soon as it cools, squeeze it and cut it into pieces.

  • Wash the parsley and chop it, peel the garlic and chop it too, and cut the tomatoes into pieces.

  • Now put the chopped and squeezed endive in a bowl, the eggs, salt and pepper to your taste, and the grated Grana Padano.

  • Mix everything.

  • In a baking tray, wet and squeeze a sheet of parchment paper, this step helps it adhere better.

  • and pour all the mixture, and finally decorate with the tomato pieces.

  • Bake in a fan oven at 356°F for 15 minutes, or static at 374°F for the same time.

    After the time has passed, open the oven door, but let it rest inside for another 5 minutes

  • Gently peel off the parchment paper, and serve at room temperature.

    preheat the air fryer then cook for 5 minutes at 356°F.

    at the end of cooking let the frittata rest in the drawer until it has cooled down.
