Fruit Ice Cream and Rose Petals

Fruit ice cream and rose petals. I created this dessert specifically for myself because I’m always on a diet. Unable to eat ice cream, but with a great desire to do so, I bought a frozen fruit juicer and indulge in it.

For those who don’t have a juicer, you can use a Thermomix or a powerful blender.

To achieve the right consistency, I used Greek yogurt which adds creaminess and the delicacy of rose petals. Greek yogurt actually originates from Bulgaria and is mainly produced in the United States but is called Greek, and that’s how we know it. It has less sodium, less lactose, more protein than traditional yogurt, making it more suitable for low-sodium diets and for those who are lactose intolerant, considering that it is more nutritious than the traditional kind with a lower sugar content but with the same level of live cultures.

  • 10 strawberries (Frozen)
  • 1 banana (frozen in pieces)
  • 80 g Greek yogurt
  • 1 teaspoon stevia
  • as needed edible flowers (Rose)
  • 5 leaves Mint

Fruit Ice Cream and Rose Petals

  • To make this ice cream, you need to put the fruit in the freezer the night before, washed and without peels and leaves. Also, the banana must be sliced.

  • I set aside 2 strawberries and processed the rest along with the banana in a juicer which turns them into ice cream without adding anything else.

    For those using the Thermomix, you should grind them for 3 min on speed 7, then gather with the spatula, insert the butterfly whisk, and whip for 3 min on speed 3.

  • In the small cups, I put 2 teaspoons of Greek yogurt,

  • then rose petals, (I got the rose petals from my dwarf roses, you can use whichever you like, but it’s important that they are untreated), a tablespoon of ice cream, a little more Greek yogurt, and more petals.

  • I candied the strawberries in dietor and used them as a cap. I finished with mint leaves.
