A friend of mine from Warsaw introduced them to me after her trip to Sweden.

- 1.06 oz erythritol
- 2 tbsp honey (or sugar-free orange marmalade)
- 1 tsp ground cinnamon
- 2 pods cardamom
- Half tsp ground ginger
- Half tsp nutmeg (ground)
- 1 tsp ground cloves
- 1 pinch salt
- 2.12 tbsp sunflower oil (or coconut oil)
- 2 tbsp water (iced)
- 7.05 oz almonds (peeled and whole)

Steps
Let’s get into the kitchen
In a bowl, mix the almond flour with all the spices, the inside of the cardamom pods, coconut sugar, salt, and baking soda, add the honey or marmalade diluted in cold water, and the seed oil, combine
until you get a soft and malleable dough.
1. Form a ball, place it in a container covered with plastic wrap, and let it rest in the refrigerator for 30 minutes.
1. After the time has passed, remove the dough from the refrigerator and place it between two sheets of parchment paper, and roll it out to a thickness of about 1/8-1/6 inch.
Now comes the fun part:
using cookie cutters, shape the cookies with Christmas-themed shapes like stars, trees, hearts, or any shape you like.
Press lightly to add an almond to each cookie.
Gently place the cookies on a baking sheet lined with parchment paper, and bake in a preheated static oven at 338°F for 15 minutes, adjusting to your oven.
Take the scraps and knead them again, and if they are soft, let them rest a bit in the fridge, always wrapped in plastic wrap.

Now that the cookies are baked
remove them from the oven and let them cool completely before serving.
It is important not to remove the cookies from the parchment paper until they are completely cooled
Put all the ingredients in the Thermomix and knead in spike mode for 4 minutes
You will get a crumbly mixture that you will later need to compact with your hands.
Form a ball, cover it with plastic wrap, and let it rest in the fridge for 30 minutes, then you can proceed with the recipe as described above.
Gingerbread Christmas Cookies can be stored for 10 days in a container with an airtight lid.
