Grains with Chard and Goat Cheese Bimby Recipe
As the cold arrives, we need warm but light soups.
What could be better than a mix of grains, Rice, barley, spelt, etc.
The pairing with red chard not only adds color but also provides a boost of vitamins, and the contrast with goat cheese offers the right amount of savor.
You can substitute the mix with just rice and the goat cheese with ricotta or another spreadable cheese; in this case, since these are more delicate cheeses, it would be better to add a little grated parmesan at the end during creaming with butter.

- 1 Tropea red onion
- teaspoons broth cubes
- 2 tbsps extra virgin olive oil
- to taste salt
- 3.5 oz goat cheese
- 1 cup Mix of grains
- 1 1/4 cups water
- 1 1/2 tbsps butter
- to taste pepper

Let’s start by peeling the onion and cutting it into 4.
For now, we’ll use only 1 turnip, removing it from the casing and cutting it into chunks.
Put the onion in the bowl and chop for 5 sec. speed 5. Gather with the spatula.
Add the red chard and 2 tbsps of EVO oil and cook 3 minutes at 248°F speed 1
Add the grains and toast without the measuring cup for 3 min. 248°F speed 1
Add water, 1 heaping teaspoon of bimby vegetable stock cube, and half a teaspoon of salt. Stir the bottom with the spatula, and cook with the basket or, for those equipped, the splash guard instead of the measuring cup, 14 minutes 212°F speed 1.
Let them rest in the bowl for 2 minutes, then pour them onto a serving dish, add the butter and cream.
Finally, plate by placing a quenelle of goat cheese on top
