- 1.4 oz Parmigiano Reggiano (PDO)
- 1 clove garlic
- 3 tbsp extra virgin olive oil
- 4 artichokes (hearts only)
- 1 1/4 cups mixed grains
- 3 1/3 cups water (about)
- 1 bouillon cube (vegetable)
- to taste salt
- Half lemon

Here’s what we need
- Knife
- Cutting board
- 1 Wok or Thermomix
- Bowl
Preparation: Grandma’s mixed grains with artichokes
In a bowl put some water and 2 lemons halved.
Remove the outer leaves.
Clean the artichokes thoroughly, removing the stem and excess leaves.
You will only need the heart of the artichoke.
As you peel them, immerse them in the bowl with the water and lemon; finally slice them and keep them in the water until needed.
In a pan or wok put the extra virgin olive oil, the garlic and the chopped parsley. Sauté for a few minutes to flavor,
Add the sliced artichokes, a small pinch of salt and the bouillon cube.
Let the artichokes brown for a few minutes, then…
Add the mixed grains. Raise the heat and toast as you would for a risotto.
Add the water and let cook for 12 minutes.
At the end, besides the Parmigiano I added some porcini mushroom oil.
At this point taste, and if cooked, turn off the heat and add the Parmigiano. Stir, and let rest in the pan for 5 minutes.
Then serve.
Here is Grandma’s mixed grains with artichokes cooked in the traditional way.
Grate the Parmigiano in the Thermomix bowl: 10 sec./speed 10. Transfer to a bowl and set aside.
Put the garlic and parsley in the bowl and chop: 5 sec./speed 5. Scrape down with the spatula.
Add the extra virgin olive oil and the sliced artichokes, sauté: 3 min./248°F/reverse/speed 1.
Add the mixed grains, toast: 3 min./212°F/reverse/speed 1 without the measuring cup.
Pour in the water, the bouillon cube and the salt, mix thoroughly with the spatula to move the grains, cook: 12 min./212°F/reverse/speed 1, placing the simmering basket on the lid instead of the measuring cup to avoid splashes.
With the spatula, cream the grains with the grated Parmigiano Reggiano set aside and let rest in the bowl for at least 5 minutes, time to set the table.
and then you can serve Grandma’s mixed grains with artichokes made with the Thermomix.
