  • 2 chilies
  • 1 carrot
  • 1 stalk celery
  • 1.3 lbs sausage (I make it at home)
  • 3 cups tomato puree
  • 1 leaf bay leaf
  • to taste salt
  • Half glass wine
  • 12 oz pasta
  • to taste basil

  • 1 Frying Pan or the Bimby
  • 1 Knife
  • 1 Pot
  • 1 Cutting Board
  • 1 Chopper

Steps

To prepare the

  • With the pot recipe, peel the onion and garlic, core the celery and carrot, cut them into coarse pieces, and then chop them using a food processor.

  • Remove the casing from 200 grams (about 7 oz) of sausage and crumble it.

  • Let’s start cooking.
    Place the onion, celery, garlic, carrot, and chili in the wok along with some extra virgin olive oil, and sauté over low heat,
     

  • Add the crumbled sausage, one bay leaf, some basil, and let it all brown. Deglaze with the wine and let it evaporate.

    At this point, you can add the sausage pieces that remain whole,
    And finally, the tomato puree.

    Lower the heat and let it cook for 30 minutes with a splatter guard on top,
    in the meantime, bring the water for the pasta to a boil.

    When the sauce is done, remove the whole sausage and keep it warm.
    Drain the pasta and toss it in the wok.
    Serve this dish hot with a sprinkle of Parmesan cheese.

  • Put the onion, carrot, garlic, and celery into the bowl, and chop for 10 sec. speed 8. Gather with the spatula and pour in the extra virgin olive oil, and sauté for 3 min. at 230°F reverse direction speed 1 with the basket instead of the measuring cap.

  • Now add 7 oz of crumbled sausage, and sauté for 1 min. at 212°F reverse direction with the basket on top.

  • Place the rest of the sausage in the Varoma, close and cook for 20 minutes at Varoma temperature speed 1 reverse direction.
