Good and above all healthy, there’s no need to extol the properties of grapefruits, we all know them, but sometimes the sour bitter taste may not appeal to everyone.
I have found the solution to appreciate this jewel of nature.
To make grapefruit compote without sugar, and with sugar, I used pectin 3:1.

  • 2.2 lbs grapefruits (organic white or pink)
  • 1 packet pectin (3:1 or 14 oz of apples)
  • 10 oz erythritol (or 10 oz sugar or 3.5 oz stevia)

  • 1 Pot or Thermomix
  • 1 Immersion Blender or Thermomix
  • 5 Jars 8.8 oz airtight

Steps

For cooking

  • Start with the treatment of the fruit, which must be strictly organic.

    Wash the grapefruits very well,

  • then slice them thinly, including the peel, place them in a large bowl, and cover them with water.

  • Let them rest for 24 hours, changing the water about every 8 hours.
    Then drain them, this will remove the bitterness of the peel.

  • Transfer the drained grapefruit pieces to a pot, and, if you have decided to use apples as a sweetener, cut them into 4 wedges, remove the core and dice them,

  • Then blend with an immersion blender until you achieve a puree as smooth as possible.
    If you have decided to use pectin, you can skip this step with the apples.

  • Now pour the mixture into a pot, turn on the heat, and bring it all to a boil.

    At this point, cover with a lid and cook for about 30 minutes, over a gentle flame, stirring occasionally, until the fruit becomes nice and soft and has dried.

    Meanwhile, proceed with the sanitization of the 8.8 oz screw-top jars

  • After cooking, transfer the still hot grapefruit compote into previously sterilized glass jars, close them well and place your jar upside down, leaving it in that position until it has completely cooled and a vacuum has formed in the jar.

  • Now you can store your grapefruit compote in the pantry or enjoy it

  • blend: 10 sec./speed 7. and gather at the bottom with the spatula.

  • Position the Varoma container (without lid) instead of the measuring cup, and cook: 30 min./100°C/speed 1. Meanwhile, proceed with the sanitization of the 8.8 oz screw-top jars

  • Check the cooking of the compote and transfer it into the sanitized jars while still hot. Close immediately, turn the jars upside down, and let them cool completely before putting them back upright and checking that the center of the lid has lowered creating the vacuum. Place the jars and lids in a large pot, covering them completely with water. Bring to a boil over medium heat and let boil for 30 minutes.

At the end, turn off the heat and leave them warm by covering the pot with a lid. Remove the jars and lids carefully using tongs and dry them completely with a clean cotton cloth.

If the vacuum did not form, the compote should be stored in the refrigerator and consumed within a maximum of 7 days.

Storage

Label the jars with the name and date of preparation before storing them in the pantry.

The compote keeps for several months in a cool, dry, and light-free place.

Once the jar is opened, consume the contents within 15-20 days and keep it closed in the refrigerator.
