I have found the solution to appreciate this jewel of nature.
To make grapefruit compote without sugar, and with sugar, I used 3:1 pectin.

  • 2.2 lbs grapefruits (organic white or pink)
  • 1 packet pectin (3:1 or 400 g apples)
  • 500 g erythritol (or 300 g sugar or 100 g stevia)

What we need to make

  • 1 Knife
  • 1 Pot or the Bimby
  • 1 Immersion Blender or the Bimby
  • 5 Jars 250 g airtight

Steps

To cook

  • Start with the treatment of the fruit, which must be strictly organic.

    Wash the grapefruits very well,

  • then slice them thinly, including the peel, place them in a large bowl, and cover them with water.

  • Let them rest for 24 hours, changing the water every 8 hours or so.
    Then drain them, thus removing the bitterness of the peel.

  • Transfer the drained grapefruit pieces into a pot, and if you have decided to use apples as a sweetener, cut them into quarters, remove the core, and dice them,

  • Then blend with an immersion blender until you get the smoothest possible puree.
    If, on the other hand, you have decided to use pectin, you can skip this apple step.

  • Now pour the mixture into a pot, turn on the heat, and bring everything to a boil.

    At this point, cover with a lid and cook for about 30 minutes over low heat, stirring occasionally until the fruit is nice and soft and has dried.

    In the meantime, proceed with the sanitization of the jars with a 250 g screw cap

  • After cooking, transfer the still boiling grapefruit compote into previously sterilized glass jars, close them well, and place your jar upside down, leaving it in that position until it has completely cooled down and the vacuum has formed in the jar.

  • Now you can store your grapefruit compote in the pantry or enjoy it

    Place the grapefruit pulp, sweetener/sugar, and apples or pectin, into the mixing bowl,

  • blend: 10 sec./speed 7. and gather at the bottom with the spatula.

  • Place the Varoma receptacle (without the lid) instead of the measuring cup, and cook: 30 min./100°C/speed 1. In the meantime, proceed with the sanitization of the jars with a 250 g screw cap

  • Check the cooking of the compote and transfer to the sanitized jars while still hot. Close immediately, turn the jars upside down, and let them cool completely before returning to their position, verifying that the center of the lid has gone down, creating a vacuum. At the end, turn off the heat and leave them warm, closing the pot with the lid. Carefully remove the jars and lids with tongs and completely dry them with a clean cotton towel.

If the vacuum has not formed, the compote must be stored in the refrigerator and consumed within a maximum of 7 days.

Storage

Label the jars with the name and date of preparation before storing them in the pantry.

The compote keeps for several months in a place away from light, cool, and dry.

Once the jar is opened, consume the contents within 15-20 days and store it closed by placing it in the refrigerator.
