Greek Cereal Mix with Eggplants.
While on vacation, in a small tavern in Mykonos, there was an old lady who prepared this dish for all the tourists, it wasn’t a restaurant, nor a trattoria.
She had placed 3 small tables with 6 chairs on the patio of her home adorned with climbing wisteria and bougainvillea.
I loved it so much that I asked for the recipe.
Besides its deliciousness, the cereals increase the feeling of satiety and aid in intestinal transit, reduce the absorption of fats and cholesterol, and reduce the risk of developing some types of cancer.
I made both the traditional recipe and the one with Bimby cooking.
It’s a complete dish of carbohydrates, fiber, and proteins, sufficient to meet the needs of an adult.

  • 10.5 oz eggplant
  • 1.75 oz onion (white)
  • 12.3 oz veal (ground)
  • salt
  • 2 tablespoons extra virgin olive oil
  • sweet paprika
  • 2 teaspoons broth cube (granulated)
  • as needed water
  • 2 tablespoons Parmigiano Reggiano DOP (grated)
  • white pepper
  • 2.1 oz 0% fat Greek yogurt

Preparation of Greek Cereal Mix with Eggplants

Traditional cooking

  • Let’s start with preparing the ingredients,

    Chop the onion into coarse pieces and place it in a pot.

  • Peel the eggplant and dice it.

  • In a pot, sauté the onion with a drizzle of extra virgin olive oil until it becomes golden…

  • add 2 glasses of water and 2 teaspoons of granulated broth. Stir and…

  • and the eggplant cubes.

  • Cover and simmer for 4 minutes.

  • After the time has passed, add the ground meat, breaking it up with your hands, stir, and cook for another 2 minutes.

  • then, 2 tablespoons of Greek yogurt mix, adjust salt, pepper, and sweet paprika.

  • Next, add a little water, about twice the pot’s content, and bring to a boil.

  • Once it starts boiling, add the mix, and cook for about 10 minutes, stirring occasionally.

  • When the cereals are al dente, turn off the heat, and, off the flame, add 2 heaping tablespoons of parmesan, stir, and cover with the lid.

    Let rest for 5 minutes then….

  • Plate, Serve hot.

  • Peel the eggplant and dice it.

  • Do the same with the onion and cut it into coarse pieces.

    Put the onion in the bowl. Chop for 7 sec at speed 5. Then gather with the spatula.

  • Add the extra virgin olive oil and flavor at 248°F for 3 min. speed 1

  • at this point add 2 glasses of water and 2 teaspoons of granulated broth, the eggplant cubes, and cook for 5 min. at 212°F spoon speed.

  • After the time has passed, add the ground meat, breaking it up with your hands, stir, and cook for another 2 minutes at 212°F speed 1 counterclockwise.

  • then, add 2 tablespoons of Greek yogurt, adjust salt, pepper, and sweet paprika to taste, and mix for 1 min. Counterclockwise spoon speed.

  • Pour 250 gr of water into the bowl, and bring back to a boil for 10 min at 212°F spoon speed.

  • Put the cereal mix, and cook for about 10 minutes, at 212°F counterclockwise spoon speed.

  • Open the bowl and add 2 heaping tablespoons of parmesan, mix for 2 min, counterclockwise speed spoon

    Let rest 5 minutes in the bowl then….

  • Serve hot.
