  • 1 clove Garlic
  • to taste Chili Pepper
  • 2 tbsp Extra Virgin Olive Oil
  • 9 oz Pasta

Preparation of Green Beans in Tomato Sauce with Casarecce and Eggs

  • Let’s start by trimming the ends of the green beans and washing them

  • In a pot, boil salted water. When it boils, add the green beans. Cook for 5 minutes

  • Then drain them and cool them with ice water to maintain their vibrant color.

  • In a pan, crush a clove of garlic and sauté it with extra virgin olive oil

  • Cut the tomatoes into pieces and add them to the pan with a bit of basil, season with salt.

  • Cover and cook for 5 minutes.

  • Then add the green beans. Stir, adjust with pepper, and let cook for another 4 minutes. Then remove half which will be used for the pasta.

  • Meanwhile, in a small pan, sauté garlic, oil, and chili pepper

  • Add the green beans that you set aside, stir, and let cook for 2 minutes.

  • Secondly, in the pan with the green beans that we set aside, crack 3 eggs, cover them with a lid, and let them cook on low heat, according to your taste.
