  • 3 Eggs
  • 10.6 oz (about 1 2/3 cups) Tomatoes
  • 1 clove Garlic
  • to taste Red pepper flakes
  • 2 tbsp (approx. 30 g) Extra virgin olive oil
  • 9 oz (about 250 g) Caserecce pasta
  • Basil

Preparation of green beans in tomato sauce with caserecce and eggs

  • Start by trimming the ends of the green beans, then wash them

  • In a pot, bring salted water to a boil. When it reaches a boil, add the green beans. Cook for 5 minutes

  • Then drain them and cool them with ice water so they keep a bright color.

  • In a pan, crush a clove of garlic and sauté it in extra virgin olive oil

  • Chop the tomatoes and put them in the pan with a little basil, season with salt.

  • Cover and cook for 5 minutes.

  • Then add the green beans. Stir, adjust the pepper, and let cook for another 4 minutes. Then remove half — these will be used for the pasta.

  • Meanwhile, in a small skillet prepare garlic, oil and red pepper flakes

  • Add the green beans you had set aside, stir and let cook 2 minutes.
