- 12 prawns
- 2 tomatoes (ripe)
- 1 cup breadcrumbs
- to taste chopped parsley
- 1 clove garlic
- to taste salt
- to taste lemon juice
- to taste extra virgin olive oil
- to taste dried oregano
- to taste pepper

Preparation of Grilled Squid Stuffed with Prawns
Clean the prawns, removing their head without damaging the pocket, insert your fingers and pull out the guts,
Do not remove the skin, as charring will give it an excellent sea flavor.
Remove the head from the prawns, and…
squeeze each one, collecting the juice in a bowl.
Remove the skin and legs completely, and set aside.
In a bowl, put the Sicilian seasoned breadcrumbs with chopped garlic and parsley, salt, pepper, 2 tablespoons of extra virgin olive oil, diced tomatoes, and whole prawns, along with the juice from the heads you squeezed earlier, mix
You thus obtained the stuffing.
Divide the stuffing into 4 parts and start filling the squid,
Finally, insert the head like a cap, securing it with toothpicks.
Continue until you have finished all the squid.
GRILLING.
Turn on the grill, and as soon as it is hot enough, place the squid on top, cooking them for 5 minutes on each side.
Turn them over and cook again, and as soon as the fork tines can penetrate, they are cooked.
While the squid are cooking, in a bowl mix the juice of 1 lemon, 1/2 teaspoon of oregano, a little parsley and 1 clove of finely chopped garlic, a pinch of salt and pepper, and 2 tablespoons of extra virgin oil, beat with a fork.
