Grilled Stuffed Squid with Prawns

in

Grilled Stuffed Squid with Prawns.
The taste of the sea, my Sicilian sea and my land, with ripe tomatoes even in winter. The scent of beautiful Sicily, the warmth of the sun even in winter.
Poetic notes for this dish, elegant in its rusticity, flavorful in its marine saltiness notes, with the aroma of ‘salmoriglio,’ the typical sauce we Sicilians put on fish.
No point in talking further….. prepare this dish, and you’ll see I’m not joking.

Preparation of Grilled Stuffed Squid with Prawns

  • Clean the prawns by removing the head without damaging the pouch, insert your fingers and pull out the entrails,

Do not remove the skin, as toasting it will give it a great sea flavor.

  • Remove the head of the prawns, and…

  • squeeze each of them collecting the juice in a bowl.

  • Completely remove the skin and legs, and set aside.

  • In a bowl, place the seasoned breadcrumbs with chopped garlic and parsley, salt, pepper, 2 tablespoons of extra virgin olive oil, diced cherry tomatoes, whole prawns, and the juice from the squeezed heads, mix

  • You have now obtained the stuffing.

  • Divide the stuffing into 4 parts and start filling the squid,

  • Finally, as if it were a cork, insert the head, securing it with toothpicks.

  • Continue until you have finished all the squid.

  • GRILL COOKING.

Turn on the grill, and as soon as it’s hot enough, place the squid on top, cooking them for 5 minutes on each side.

  • Turn over, and cook again, and as soon as the fork prongs can penetrate, it means they are cooked.

  • While the squid are cooking, in a bowl combine the juice of 1 lemon, 1/2 teaspoon of oregano, a little parsley and 1 finely chopped garlic clove, a pinch of salt and pepper, and 2 tablespoons of extra virgin olive oil, beat with a fork.

  • For air fryer cooking:

Temperature 392°F, preheat, then spray the squid with cooking spray, cook 5 minutes per side. Here are your
