Holiday cupcakes, traditional and Bimby recipe
These delicious cupcakes are perfect for celebrating the holidays and all special occasions. I made them for these holidays, but you can make them for any other occasion and theme.
They are made of simple cupcakes and then decorated with mascarpone cream, marshmallows, and colored sprinkles.
But the decorations can also vary to your liking.
Next to the traditional ingredients, you will also find those with a low glycemic index. For the latter, the sprinkles and marshmallows should be replaced with nuts or chocolate chips.

- 1 1/3 cups all-purpose flour (or FiberPasta flour)
- 1/3 cup sugar (or 1/2 cup erythritol)
- 6 tbsps vegetable oil
- 1/2 packet baking powder
- 1 pinch salt
- 2 eggs
- 1/2 cup heavy cream
- 10.5 oz mascarpone
- 2/3 cup powdered sugar (or 1/2 cup erythritol powder)
- 3 1/2 oz marshmallows (or chocolate chips)
- as needed food coloring (for color of choice)

- 1 Piping Bag with grooved nozzle
Steps
Preliminaries for both methods
Preheat the oven to 356°F static, and place the cupcake liners on the baking tray
In a bowl or a stand mixer, add the flour, sugar, oil, a teaspoon of baking powder, 1 packet of vanilla powder, and a pinch of salt, and mix.
Mix with the whisk until a homogeneous mixture is obtained.
Then incorporate the eggs one at a time and continue mixing for 3 or 4 minutes
Now that we have obtained the mixture, fill the cupcake liners with 3/4 of the mixture
Bake at 356°F for 20 minutes. Afterward, open the oven door and let the cupcakes cool.
Chop the white chocolate and transfer it to a bowl. Melt it in the microwave with 1/4 cup of cream. If you don’t have a microwave, you can melt it in a bain-marie.
In a bowl, whip the mascarpone with 3 tablespoons of powdered sugar. Once it is sufficiently whipped, gradually incorporate the white chocolate into the mascarpone, always with the whisk in motion
When you finish incorporating the white chocolate and the mixture is homogeneous, add the food coloring drop by drop, adjusting according to the shade you want to achieve.
If you want to create cupcakes for communions or weddings, you can leave the frosting white.
Now fill a piping bag with a grooved nozzle and decorate the holiday cupcakes as you like.
Complete the cupcakes with marshmallows and sprinkles, or with various grains or dark chocolate chips according to your taste and needs.
Insert the butterfly, and pour in the eggs with the sugar and whip for 4 min. speed 3.
Through the hole, with the butterfly in motion at speed 3, add everything little by little: oil, baking powder, vanilla powder, and a pinch of salt.
Mix until a homogeneous mixture is obtained.
Transfer the mixture into the cupcake liners and fill them 3/4
then bake at 356°F for 20 minutes. Afterward, open the oven door and let the cupcakes cool.
Put the white chocolate pieces in the bowl, insert the measuring cup, and chop for 10 sec speed 5. Pour in 1/4 cup of cream and melt everything for 3 min. at 212°F speed 1. with the basket instead of the measuring cup, check if it has melted well. Otherwise, repeat the operation.
Transfer to a bowl and keep warm.
Without washing the bowl, remove the butterfly and whip the mascarpone with 3 tablespoons of powdered sugar. 4 min. speed 4.
Insert the butterfly and start the Bimby at speed 4 and gradually incorporate the white chocolate into the mascarpone, always in motion
When you have finished the chocolate, continue for 2 minutes at speed 4, adding the food coloring drop by drop, adjusting according to the shade you want to achieve.
If you want to create cupcakes for communions or weddings, you can leave the frosting white.
