Homemade Fish Sticks.
If you make them at home, you’ll be sure of the type of fish you put on the plate.
Have you ever wondered: what fish is in the fish sticks we find on the market? Or: is it really cod being used, or maybe some inferior fish?
We can cook them in a pan, in the oven, or in an air fryer.
Here’s the solution, I make the sticks at home for my grandchildren.
I use various types of fish, whatever is fresh when I go to the fish market. So, for this recipe, any type of fish weighing no less than 1 lb (500 g) will work, allowing you to make fillets that resemble the shape and size of the commercial sticks.
To make them more appetizing, we’ll do a Sicilian-style breading, so even the blandest fish becomes more delicious and appetizing.
In my case, I had a freshly caught sea bass, fished by my husband, so I prepared them with this.

- 2 eggs
- 1 cup breadcrumbs (coarse Sicilian seasoned)

Homemade Fish Sticks
I had at home a sea bass freshly caught by my husband, but you can use any type of fish.
Fillet the fish, and cut into pieces similar in length and width to commercial fish sticks.
Prepare the Sicilian seasoned breadcrumbs, following my recipe, click here,
Choose coarse breadcrumbs or half crumbled white bread and half breadcrumbs. For a crunchier coating, you can also add crushed corn flakes.
Beat the eggs, and dip each fillet first into the egg and then into the breadcrumbs, pressing well
Now decide how to cook them, either fried in a pan with plenty of sunflower oil, in a traditional fryer, in an air fryer, or finally in the oven.
In a pan: pour at least 1/4 inch of sunflower oil, and when it is hot, immerse the fillets and cook them on both sides until golden brown, then absorb the excess oil with absorbent paper.
In traditional fryer: pour sunflower oil up to the indicated level, and once it reaches 356°F (180°C), place the fillets in the basket and cook the fish for 4/5 minutes.
In air fryer: following your appliance’s instructions, place the fillets in the basket, and cook them in the fish mode. At 356°F (180°C) for about 10 minutes with the basket preheated first.
In oven: Set your appliance to 356°F (180°C), preferably with fan, place a sheet of parchment paper on a baking sheet, and arrange the fillets. Position the tray at the top of the oven and cook the fillets for 5 minutes each side, turning them halfway through.

Storage and Tips
Homemade Fish Sticks.
You can store them raw in the refrigerator for up to 2 days if the fish was fresh; if it was previously thawed, only 24 hours.
In case you use fresh fish, you can freeze the sticks for up to 3 months, separated by parchment paper, to protect the coating.
The same rules apply whether the fish is cooked or raw.

Can I use frozen fillets?
Yes, but you need to thaw and drain them well first. Then, pat them dry with a paper towel; otherwise, the coating won’t stick.
