Homemade Fish Sticks.
If you make them at home, you will be sure of the type of fish you’re putting on the plate.
Have you ever asked yourself: what kind of fish is in the commercial sticks? Or: is it really cod being used, or maybe some poor-quality fish?

We can cook them in a pan, in the oven, or in an air fryer.
Problem solved, for my grandchildren, I make the sticks at home.
I use various types of fish, whatever is fresh when I visit the fish market. For this recipe, any fish at least 1.1 lbs in size will work to get fillets more similar to the shape and size of commercial sticks.
Additionally, to make them more appetizing, we’ll make a Sicilian-style breading, so even the blandest fish becomes more delicious and appetizing.
In my case, I had a freshly caught sea bass by my husband, so I prepared them with this.

  • 1.3 lbs sea bass (other fish fillets)
  • 2 eggs
  • 1 cup breadcrumbs (coarse, Sicilian-style seasoned)
  • as needed sunflower seed oil

Steps

  • I had a freshly caught sea bass at home by my husband, but you can use any type of fish.

  • Fillet the fish, and cut into fillets that are similar in length and width to commercial sticks.

  • Prepare the Sicilian-style seasoned breadcrumbs following my recipe, click here,
    Select coarse breadcrumbs or half crumbled sandwich bread and half breadcrumbs. If you want a crunchier crust, you can also add crushed corn flakes.

  • Beat the eggs, and dip each fillet first in the egg, then in the breadcrumbs, pressing firmly

  • Now decide how to cook them, either fried in a pan with plenty of sunflower seed oil, or in a traditional fryer, or in an air fryer, or finally in the oven.

  • In a pan: pour at least ¼ inch of sunflower seed oil, and when it is hot, immerse the fillets and cook them on both sides until golden brown, then absorb excess oil with paper towels.

  • In a traditional fryer: pour the sunflower seed oil to the indicated level, and as soon as it reaches 356°F, place the fillets in the basket, and cook the fish for 4/5 minutes.

  • In an air fryer: follow your appliance’s instructions, place the fillets in the basket, and cook them on the fish setting. At 356°F for about 10 minutes, preheating the basket first.

  • In the oven: Preheat your appliance to 356°F, preferably with ventilation, place a sheet of parchment paper on a baking tray, and place the fillets. Position the tray in the top part of the oven and cook the fillets for 5 minutes on each side, turning them halfway through.

  • Homemade Fish Sticks are ready to serve, and your children and even adults will be happy and content.

Storage and Tips

Homemade Fish Sticks.

You can store them raw in the fridge for up to 2 days if the fish was fresh. If it was previously frozen, only 24 hours.

If using fresh fish, you can freeze the sticks for up to 3 months, separating each with parchment paper to protect the coating.

The same rules apply to both cooked and raw fish.

  • Can I use frozen fillets?

    Yes, but you must first defrost and drain them well. Then pat them dry with a paper towel, or the coating won’t stick.
