Homemade Roast Aromas
Scents are the first thing that take us back to the past, to our origins.
Every scent reminds us of a moment in our life that has stayed in our mind, whether it’s food or the smell of “home.” If we think of a newborn, they recognize their mom by her scent. Well, I recognize my dishes by my aromas.
If I gift a jar of my homemade roast aromas to a friend, my family will recognize my touch by just tasting her dish. Even to make my grandchildren eat happily, if they smell my aromas, they say: “this is grandma’s,” it tastes good, it tastes like home.
With the recipe I am about to describe, I prepare many foods, from classic meat roasts to bruschetta, or a simple butter pasta.
Homemade roast aromas last a long time, whether you use fresh or dried herbs, because the coarse salt we will use will stop the growth, preserving the scent of the moment.
You can make this recipe with a good blender or a Thermomix.

- 8.8 oz coarse salt
- 2 sprigs rosemary
- 2 sprigs sage
- 10 berries juniper
- to taste white peppercorns (optional)
- 3 sprigs lemon thyme
- 2 cloves garlic (large)
- 4 leaves bay leaf
- 1 sprig mint
- 0.35 oz sweet paprika
- 4 cloves
- 2 sprigs marjoram

- Blender / Mixer
- Jars of 10.6 oz
- 2 Tea Towels
- 1 Strainer / Colander
Preparation: The Good Scent of Southern Aromas
Measure the coarse salt, and pour it into the blender pitcher.
It’s important to use coarse salt because it will crush the herbs better.
Wash all the scents well, remove the central branches and place them in a colander, then dry them with one or more cloths.
If they still seem damp, wait a little and let them dry in the sun.
Peel the garlic, while the pepper and juniper berries can be used whole.
Transfer all the ingredients into the pitcher of your blender or Thermomix and blend until you get a very fine powder.
With the Thermomix, 20 sec. speed 10.
Collect the powder obtained in a jar and keep it tightly closed.
