Moreover, you can vary the use of dark chocolate, and replace it with milk chocolate or white chocolate, but you can make our cookies by adding to the mixture pine nuts, raisins, chopped pistachios or almonds or even hazelnuts, and even all together always respecting the doses indicated above for the dark chocolate.

  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Half teaspoon baking soda
  • 3/4 cup sugar (Or 100 erythritol)
  • Half teaspoon baking powder
  • 1/2 cup butter

  • 1 Electric whisk or the Thermomix
  • 3 Baking sheets flat
  • 1 Parchment paper

Steps

Traditional recipe

  • Put the chocolate chips in the freezer for at least 30 minutes.

    Then in a bowl with the help of the beaters, whip the butter with the 2 sugars or sweeteners,

  • until the mixture appears foamy.

  • Add the vanilla extract, and the egg, and continue to whip.

  • Add the baking soda and the sifted flour, a little at a time always with the beaters in motion, or if you prefer, use your hands.

  • As soon as the mixture appears smooth and homogeneous, remove the beaters, add the chocolate chips, and mix with a spoon.

  • Turn on the oven at 320°F static, and let it heat well.

  • With 2 spoons or with wet hands form balls of 1 1/2 inches in diameter

  • and place them on a baking sheet with parchment paper underneath. Make sure they are well spaced apart, as they might grow and stick together.

  • Bake for about 20 minutes, but check gradually that the edge of each cookie is well browned, this is the sign that they are cooked.
    If all the batter does not fit into your oven, it is advisable to keep the dough cool, preferably in the fridge, and take it out only when you need it.
