How to make oat gnocchi with Chia seeds

Vegan recipe. Finally, even those who cannot eat potato gnocchi have a valid alternative today, and even with a low glycemic index.
Oat gnocchi are made very quickly because this flour immediately absorbs water and is easy to compact.
In addition, I added some Chia seeds that make the mixture even more protein-rich.
Oats provide carbohydrates with a low glycemic index that ensure slow digestion and steady blood sugar levels. This results in the absence of glycemic spikes and a prolonged feeling of fullness.
The main merit of oats is the large amount of fiber within, particularly a specific type of soluble fiber, beta-glucan, which generates a longer-term feeling of fullness and helps control blood sugar levels.
Chia seeds are rich in minerals, especially phosphorus, selenium, and manganese (in smaller quantities also magnesium, calcium, iron, and zinc); they have a high content of polyunsaturated fatty acids, Omega-3, Omega-6, and Omega-9; they have a good content of proteins and fibers.
This way, insulin levels remain stable, promoting fat burning between meals. Included in dinner or as an alternative to an afternoon dessert, these seeds can positively affect weight loss as part of a low-calorie diet.
