  • The recipe is easy, but the most important and fundamental thing is the freshness of the shrimp
    Which is accompanied by a creamy pink sauce (or cocktail sauce) and crunchy leaves of lettuce or gentle salad, or arugula, which must be fresh and crunchy.

  • To prepare the shrimp cocktail, start by cleaning the catch. I chose basket shrimp, and you’ll recognize them by the fact that they are small and have blue eggs.

  • Wash the shrimp under running water, remove the head, tail, and shell. Use kitchen tweezers to also remove the intestine (the internal black thread).

  • Important: Don’t throw away the leftovers, which you can use to make broth for a good risotto or pasta with broth.

  • Now we need to prepare the shrimp, and I’ll explain how to do it,

    If you want to use them cooked, you should steam them: fill a pot with water, adding a bay leaf and a lemon wedge.

  • Put it on the heat and let it boil. Once it reaches a boil, place the appropriate basket with the shrimp inside on the pot and cook for a few minutes. When they are ready, let them cool and set them aside.

  • If you want to use them raw marinated, make sure they have been blast chilled or frozen for at least 2 days.
    Spread them out on a flat plate and drizzle them with lemon juice.
    Let them marinate for 30 minutes, then drain them and use.

  • In a bowl, mix the mayonnaise with the ketchup, mustard, and Worcester sauce. Carefully blend all the ingredients to combine them into a smooth and homogeneous mixture.
    Add cognac and cream, a little at a time, adjusting the consistency as you go. The sauce should be semi-liquid.

  • In a bowl, combine Greek yogurt, 1 teaspoon of sweet mustard, and 1 tablespoon of tomato paste. Mix and set aside

  • Choose a cocktail glass and place some lettuce or arugula leaves at the base, then some of the shrimp

  • a portion of pink sauce and another portion of shrimp on top for decoration.
    Keep it in the fridge until it’s time to serve.
