Gluten-free dish. Today, instead of the usual mixed salad, I prepared a bowl, one of those that are so trendy, which takes us on an imaginary journey to the East.
Yes, they are perfectionists and keep ingredients separate, whereas we, as artists and dreamers, prefer to mix all the ingredients together.
The most important thing is that the finished dish is light and tasty, rich with all the elements for a healthy life. From carbohydrates to fibers and proteins. All seasoned with soy sauce.

- 1 1/4 cups Basmati rice
- 1 1/3 lbs chicken (or shellfish of your choice)
- 1/3 cup walnut kernels
- 2 cups zucchini
- 1 cup mixed pickled vegetables (Julienne style)
- to taste roast spices
- to taste extra virgin olive oil
- to taste soy sauce
- 1 tsp poppy seeds

Traditional Cooking
First, marinate the zucchini following this recipe, click here
In the meantime, proceed following this procedure:
Rinse the rice under running water several times until the liquid is clear. Transfer it to a pot and add 2 glasses of water and cook over high heat for the time indicated on the package
Once cooked, drain it and cool it under cold water. Set aside.
Spread the chicken breast slices on a plate, and season them with the spices and a little bit of EVO oil.
Let the chicken absorb all the flavors, and in the meantime prepare the remaining vegetables.
Drain the pickles, deseed the walnuts.
Heat a grill, and roast the chicken breast slices.
Season with salt and pepper, and cut them into pieces. Set aside.
Now, let’s compose the dish: Place the rice at the bottom of the bowl, then make strips of chicken, pickled vegetables, zucchini carpaccio, walnuts, and poppy seeds. Drizzle everything with soy sauce and EVO oil
