- 7/8 cup (about 6.3 oz) granulated sugar (or 200 g erythritol or stevia equivalent)
- 2/3 cup (about 5.3 oz) butter
- 2 eggs (about 90 g) eggs (beaten)
- 2 2/3 tbsp (about 1.4 fl oz) lemon juice
- as needed lemon zest (from 2 lemons, only the yellow part)
- 3 1/3 cups (about 14.1 oz) all-purpose flour (Or FiberPasta flour)
- 2 teaspoons baking powder for desserts

- 2 Baking Sheets
- Parchment paper
- 1 Grater
- 1 Citrus juicer
Steps
Lemon dunking cookies
Grate the lemon zest
Make a well with the flour on a work surface, in a bowl, or in the mixer bowl. In the center place the beaten eggs, the butter in pieces, the lemon zest, the baking powder, the lemon juice and the sugar or your chosen sweetener.
Knead until you obtain a dough ball; wrap it in plastic wrap and refrigerate to firm up for about an hour.
After the resting time, preheat the oven to 356°F, take the dough out of the fridge, and form balls about 3/4 inch in diameter.
If you are diabetic, skip the next steps 4 and 5.
At this point, put some granulated sugar on one plate and some powdered sugar on another.
Now roll each ball first in granulated sugar, then in powdered sugar, and place them on a baking sheet lined with parchment paper.
Bake for about 12 minutes, until cracks form on the surface of each cookie.
Remove the cookies from the oven and let them cool before taking them off the parchment paper.
The lemon dunking cookies are ready.
Put the sugar or your sweetener and the lemon peel into the Thermomix bowl and powder for 15 seconds / speed 10.
Add the butter, the flour, the previously beaten eggs, the baking powder and the lemon juice.
Knead for 40 seconds at speed 5.
Remove the dough, place it on a work surface, shape into a ball, wrap in plastic wrap and refrigerate for about an hour to firm up.
After the resting time, preheat the oven to 356°F, take the dough out of the fridge, and form balls about 3/4 inch in diameter.
If you are diabetic, skip the next two steps.
At this point, put some granulated sugar on one plate and some powdered sugar on another.
