Preparation
Let’s go to the kitchen
Lemon Gratinated Scabbardfish. Ask your trusted fishmonger to fillet the fish for you, and don’t throw away the bones, as they can make a really special broth for spaghetti.
Prepare a baking dish with parchment paper for oven cooking, or if cooking in an air fryer, place it directly in the basket with perforated parchment paper.
Place the fish fillets with the silver side down. Grate half of the lemon zest, being careful not to grate the white part.
Chop the parsley, put it in a small bowl, and extend it with some oil, then spread a bit of the mixture on top with a teaspoon.
Prepare the seasoned breadcrumbs with garlic, chopped parsley, grated Pecorino Romano, salt, and pepper, and moisten with a small cup of water and 2 tablespoons of oil
Spread the breadcrumbs over the fillets.
Grate the other half of the lemon.
