Light Apple Bundt Cake RitaAmordicucina with and without cocoa.
The classic bundt cake that every mother or grandmother eventually makes for their family.
Today, I will offer you a light version, without sugar or fats.
With and without cocoa, in the two-color version, so you can choose one recipe or the other.
To sweeten, I will use a little bit of sweetener and then the many apples that create a softness on the palate that sends you into ecstasy,
You will find first the recipe prepared traditionally, and then the one prepared with my Thermomix.

  • 5 Apples
  • Lemon juice (and grated zest)
  • 3 Eggs
  • 1 1/3 cups All-purpose flour (Low G.I. or wholemeal)
  • 1 packet Baking powder
  • 1/4 cup Sweetener (Stevia or 120 erythritol)
  • 2/3 cup Plain yogurt (or Greek 0%)
  • 1 packet Vanillin
  • Salt (a pinch)
  • Butter
  • Flour
  • 2 tbsps Unsweetened cocoa powder

  • Cake pan 20 cm ø bundt pan
  • Cutting board
  • Knife
  • Mixer

Preparation of the Light Apple Bundt Cake RitaAmordicucina

  • First, turn on the oven in static mode, at 356°F.

    Grate the zest of a lemon and collect the juice,

  • Peel the apples and cut 3 into slices,

  • and 2 into rings removing the core, put both in 2 bowls and pour the lemon juice over them, mix so that the lemon blends well with the apples to prevent them from browning.

  • Put the lemon zest, sweetener, and eggs in the mixer and start mixing.

  • When the mixture is whipped, add the flour little by little and continue to mix.

    Add the vanillin, yogurt, and salt, and when these ingredients are well blended, add the baking powder.

  • As soon as the mixture looks smooth and homogeneous, turn off the mixer

  • Butter and then flour the cake pan.

  • Place the apple slices as shown in the photo.

  • Pour the mixture over the slices.

  • At this point, if you want to make the two-color bundt cake, just divide the mixture in half, in the half that remains, add the cocoa, mix well, and make the last apple layer.

  • In both cases, finish by placing another round of apples.

  • Place the cake pan in the preheated oven at 356°F for about 40/45 minutes, after the time make the toothpick test, if it comes out dry you can take it out, otherwise continue baking for a few more minutes.

  • When it is ready, take it out and let it cool

  • With the help of a plate, flip the bundt cake and remove it from the mold.

  • Serve at room temperature.
