  • 16 asparagus
  • 1.4 oz onion
  • 3 tbsp extra virgin olive oil
  • 2.8 oz smoked bacon (diced)
  • 1.4 oz grated Grana Padano
  • to taste salt

  • to taste mint (leaves)
  • 10.5 oz linguine

To prepare

  • The first thing to do is wash and trim the asparagus.

    Remove the woody, lighter end and discard it, then with the middle part we’ll create a cream and stock by simply boiling them in water and salt for at least 10 minutes. Set the tips aside.

  • Once cooked, remove them from the pot, transfer them to a bowl, and blend with a little of their cooking water, adjust salt and pepper, and transfer to a large pan. Set aside.

  • Now let’s move on to the tips. In a small pan, add the onion and extra virgin olive oil and let the onion flavor lightly. Once golden, add the asparagus tips and a bit of the stalks’ cooking water, and cook for about 3 or 4 minutes.
