- 16 asparagus
- 1.4 oz onion
- 3 tbsp extra virgin olive oil
- 2.8 oz smoked bacon (diced)
- 1.4 oz grated Grana Padano
- to taste salt
- to taste pepper
- to taste mint (leaves)
- 10.5 oz linguine

Steps
To prepare
The first thing to do is wash and trim the asparagus.
Remove the woody, lighter end and discard it, then with the middle part we’ll create a cream and stock by simply boiling them in water and salt for at least 10 minutes. Set the tips aside.
Once cooked, remove them from the pot, transfer them to a bowl, and blend with a little of their cooking water, adjust salt and pepper, and transfer to a large pan. Set aside.
Now let’s move on to the tips. In a small pan, add the onion and extra virgin olive oil and let the onion flavor lightly. Once golden, add the asparagus tips and a bit of the stalks’ cooking water, and cook for about 3 or 4 minutes.
Adjust salt and pepper and set aside.
Now toast the bacon, letting it sweat well without adding anything.
Put the pot of water for the pasta on the stove.
In the pan with the asparagus cream, add the tips,
And half of the sweated bacon.
When the pasta is al dente, add it to the pan with the sauce,
Along with the Grana Padano and mix on the heat,
Serve the pasta by adding the crispy bacon we had aside and a few mint leaves for freshness.
