- 1 pinch salt
- 1 teaspoon sugar (Or erythritol)
- 3/4 cup Milk
- 1 egg
- 2 tbsp Butter (melted optional or coconut butter)

Preparation of Maltese Pancakes Original Recipe
Let’s start the preparation: in a large bowl, sift together flour, baking powder, salt, and sugar.
Create a “volcano” in the middle, pour in the milk, egg, and melted butter; mix with a fork or whisk until the mixture appears smooth.
If you are using Bimby: Put butter in the bowl and melt for 2 min at 99°F speed 2.
Add: flour, baking powder, salt, sugar, milk, the egg; mix for 3 min. speed 4.
Then heat a non-stick griddle or large pan over medium-high heat.
When it’s very hot, pour 1/4 cup of batter for each pancake.
Wait until bubbles form.
If you wish, you can add blueberries or berries to the batter as you like.
Once bubbles appear, brown on the other side and serve with butter and blueberry syrup or Nutella.
