  • 1 pinch salt
  • 1 teaspoon sugar (Or erythritol)
  • 3/4 cup Milk
  • 1 egg
  • 2 tbsp Butter (melted optional or coconut butter)

Preparation of Maltese Pancakes Original Recipe

  • Let’s start the preparation: in a large bowl, sift together flour, baking powder, salt, and sugar.

  • Create a “volcano” in the middle, pour in the milk, egg, and melted butter; mix with a fork or whisk until the mixture appears smooth.

  • If you are using Bimby: Put butter in the bowl and melt for 2 min at 99°F speed 2.

    Add: flour, baking powder, salt, sugar, milk, the egg; mix for 3 min. speed 4.

  • Then heat a non-stick griddle or large pan over medium-high heat.

  • When it’s very hot, pour 1/4 cup of batter for each pancake.

    Wait until bubbles form.

  • If you wish, you can add blueberries or berries to the batter as you like.

  • Once bubbles appear, brown on the other side and serve with butter and blueberry syrup or Nutella.
