- 5 oz pineapple
- 1 lemon (juice)
- 1 bunch chopped parsley
- 2 tbsp extra virgin olive oil
- to taste salt
- to taste pepper

Preparation: Marinated Shrimp with Pineapple Zest
Choose fresh shrimp. You will recognize them immediately because they will not have an ammonia smell.
Remove the head and shell.
Do not discard the heads because you can make a good fish stock
Squeeze a lemon, and cut thin slices of pineapple, then cut them into matchsticks.
Chop the parsley.
Arrange the peeled shrimp on 2 plates, and drizzle them with lemon juice.
Add the pineapple zest, and let rest in the fridge for an hour.

Season with extra virgin olive oil, pepper, chopped parsley, and a grind of pepper.
