- 7 oz milk
- 2 eggs

- 10 oz tomato purée (thickened)

Steps
To make the
Prepare the eggplants:
Wash and slice the eggplants not too thinly, without removing the skin.
If you choose to cook them in an air fryer, spray them with some oil and cook at 400°F for 10 minutes, then turn them and complete the cooking until golden brown.
If you want to bake them in a traditional oven, turn it on at 375°F fan-assisted, arrange the slices on a baking tray with parchment paper, bake them for about 10 minutes, then turn them and complete the cooking until golden brown
Start the preparation by cooking the hard-boiled eggs,
Put the stale bread cut into pieces in a bowl with the milk until it becomes soft, then squeeze it and put it in a bowl.

Now that we have all the bases, start making the meatloaf.
Take some good fresh ground beef, put it in a bowl,
add the soaked and well-squeezed bread, the Sicilian breadcrumbs, the 2 eggs, a pinch of salt and pepper, and start kneading.
Do not throw away the leftover milk from the stale bread, which can be used to further moisten the mixture.
On the parchment paper, lay the eggplant slices side by side
and then on them the mixture and… With wet hands, spread it into a square.
Spread the provola cheese cubes on top.

Sprinkle with the herbs, and with the help of the parchment paper, roll the meatloaf tightly,
ending with the ends like a candy.
Place the meatloaf wrapped like this in a baking dish
Put the baking dish in a preheated oven at 350°F fan-assisted for at least 10 minutes, then halfway through cooking, carefully turn the meatloaf upside down and bake for another 10 minutes. Be careful not to burn yourself.
Let the meatloaf rest on the cutting board without opening it for at least 10 minutes. Then brush it with the thickened and seasoned tomato purée as you like, a sprinkle of grated parmesan, and slice it

You can keep the meatloaf with eggplant in the fridge for 3 days and in the freezer either raw or cooked for up to 3 months.
