Meatloaf with sauce and potatoes.
The family goes crazy for it. This is a light version as it is not fried but cooked in sauce, accompanied by potatoes, and flavored with ham, cheese, hard-boiled eggs, and vegetables.
Cooked wrapped in parchment paper, this meatloaf still gets a nice color with a slight crust outside, without losing the internal moisture needed to prevent it from becoming dry.
The potatoes will be cooked separately and then immersed in the sauce that will accompany the meatloaf.

- 1 cup breadcrumbs (seasoned Sicilian style, see my recipe)
- 1 cup milk
- 3.5 oz stale bread
- 2 eggs
- as needed salt
- as needed pepper
- as needed roast herbs (see my recipe)
- 7 oz carrots
- 4 hard-boiled eggs
- 2 slices cooked ham
- 2 slices raw ham
- 7 oz provola cheese
- 14 oz potatoes
- 3.5 oz onion
- 3.5 oz carrots
- 18 oz tomato puree
- 4 tbsp extra virgin olive oil
- as needed salt

Steps
Let’s go to the kitchen
Start preparing by cooking the hard-boiled eggs,
Peel the carrots and cut them into sticks, but leave the ones needed for the side dish in slices.
Put the stale bread cut into pieces in a bowl with the milk until softened, then squeeze it and place it in a bowl. Prefer bread with a lot of crumb
Prepare the Sicilian seasoned breadcrumbs, for the recipe click here
Take some good fresh ground beef and place it in a bowl
Add the soaked and well-squeezed bread, Sicilian breadcrumbs, the 2 eggs, a pinch of salt and pepper, and start mixing.
Do not discard the leftover milk from the stale bread, as it may be needed to further moisten the mixture.
Place the mixture on parchment paper and…
With damp hands, spread it out to form a square.
Spread the slices of ham on top.

carrots cut lengthwise, and finally the whole hard-boiled eggs, in this position, you will find them inside as soon as you cut the slices.
Sprinkle with the herbs, and with the help of the parchment paper roll up the meatloaf
from one side and then from the other.
Tighten the closure well so that the cheese does not come out during cooking.
Wrap the parchment paper tightly, ending with the ends like a candy
Transfer the meatloaf to the oven and prepare the potatoes for the side dish.
In another baking tray, peel and cut the potatoes and carrots into slices and the onion into slices, drizzle with extra virgin olive oil, salt, and roast herbs.
Place in a preheated oven at 356°F with fan for at least 10 minutes, then halfway through cooking, carefully turn the meatloaf upside down. Be careful not to burn yourself.
add the tomato puree to the potatoes, and continue cooking for another 20 minutes.
When you touch the potatoes and see the fork enters, turn off the oven
let the meatloaf rest on the cutting board without opening it for at least 10 minutes.
Then slice it and serve it surrounded by potatoes in sauce. Enjoy your meal.
Storage
You can store the meatloaf with sauce and potatoes in the fridge for 3 days and in the freezer, both raw and cooked, for up to 3 months.
