It’s my favorite salad because it speaks of my childhood, it speaks of “grandma Maria” of past holidays in Panarea, of when I returned from the beach hungry and sat in front of the entire salad bowl with hot olive oil rolls, and devoured everything in 2 minutes… Ah, what memories!
I’ll show you how to prepare the ingredients traditionally and also with the Bimby.

- 0.88 lbs potatoes
- 4 eggs
- 0.88 lbs beefsteak tomatoes
- 1.41 oz Tropea red onion
- 3.53 oz canned tuna in olive oil (weighed after draining)
- 2 tbsps capers in salt (already desalted, optional)
- to taste salt
- to taste pepper
- to taste dried oregano
- to taste basil
- to taste extra virgin olive oil

Preparation: Mixed Salad of the Sicilian Summer
Boil the potatoes in already salted water, and as soon as you can pierce them with a fork, drain and cool them under running water. Then cut them into not too large pieces.
If you use a pressure cooker, it takes only 5 minutes.
Cook the hard-boiled eggs for 16 minutes, then cool them under cold water, peel and cut them into quarters.
Pour 400 g of water into the bowl. Place the eggs in the basket and put it inside the bowl, then place medium-sized potatoes in the varoma. Close everything and cook at Varoma temperature for 20 minutes.
After cooking, cool the eggs and potatoes under cold water, then peel and cut them into quarters.
Desalt the capers under running water, slice the onion and tomatoes.
Drain the tuna in a colander. Then transfer all the ingredients into a rather large salad bowl, and season with olive oil, salt, pepper, and oregano to taste.
Mix everything gently to avoid breaking the eggs and potatoes.
Serve at room temperature.

The mixed salad of the Sicilian summer, you can keep it in the fridge for 1 day. To enrich it further, you can add black olives and diced provola cheese. It is ideal as a lunch to take to work.
