- 6 oz egg whites
- 2 oz oat flour (or fiberPasta)
- 3 teaspoons unsweetened cocoa powder
- 1 tablespoon erythritol (heaping)
- 1 packet vanillin
- 7 oz ricotta
- 2 tablespoons erythritol
- Half coffee cup water
- 3 tablespoons strawberry compote (sugar-free)
- Half tablespoon water
- 2 tablespoons dark chocolate chips

Steps
To make the
You need to get a bowl with whisks or an immersion blender, and start by whipping the egg whites with erythritol and vanillin.
Once they’re well whipped, you can add the sifted powders, namely the oat flour, cocoa, and baking powder, and continue mixing until the mixture is smooth and homogeneous.
Now heat a non-stick pan, I used a cake release spray.
Take half a ladle of the mixture and pour it onto the hot pan.
As soon as it starts to bubble, you can flip it
and finish cooking it on the other side.
Complete all the pancakes this way.
Then mix the ricotta with a small cup of water and erythritol to make layers between each pancake.
Finally, take a fruit compote of your choice, mix it with a tablespoon of water to make it semi-liquid, and decorate the plate
and sprinkle chocolate chips or your choice of sprinkles on top of the pancakes.
Oat and Chocolate Protein Pancakes can be stored without the cream for up to 4 days in a bag in the fridge or up to 3 months in the freezer.
