Ingredients for Oven-Baked Gratin Tuna with Tomatoes
- 1.32 lbs tuna (4 thick slices)
- 10.5 oz tomatoes (ripe)
- 2.8 oz Tropea red onion
- 2 tbsp extra virgin olive oil
- 0.7 oz roast herbs (for fish)
- 3.5 oz breadcrumbs (Sicilian-style seasoned, see recipe)
- to taste dried oregano
- to taste salt
- to taste pepper

Preparation of Oven-Baked Gratin Tuna with Tomatoes
Make sure the tuna is fresh, its flesh should be a vibrant burgundy red, and the eye well hydrated with a transparent cornea, never opaque
Spread the slices on a plate, drizzle them with oil on both sides.
Do not throw away the oil left on the plate.
Season the slices with fish herbs, see here how I prepare them at home.
Prepare the Sicilian-style seasoned breadcrumbs following the recipe here.
Take each slice, drain it from excess oil, and coat with breadcrumbs on both sides, pressing well to adhere.
Arrange the slices in a baking dish, close to each other so they don’t lose too much moisture.
Now cut the tomatoes into wedges, and season with oregano, salt, and pepper to taste. Set aside.
Spread the tomatoes, and..
Slice a Tropea red onion and sprinkle it all over, drizzle with the oil that was left on the tuna plate.
Bake in a 356°F oven for 20 minutes with a fan setting.
