  • 1.41 oz butter
  • 2.12 oz cream cheese (Salmon-flavored)
  • to taste salt

Preparation of Paccheri with Caviar and Salmon Cream

  • First, immediately put the water for the pasta, add the salt and bring it to a boil.

    Throw in the pasta.

  • In a wok, put the butter and let it warm up a bit.

    As soon as the pasta is 3/4 cooked, scoop it up with a skimmer, and without draining, add it to the butter.

    Finish cooking it, and, if needed, add a ladle of its water

  • At the end of cooking, turn off the heat, and add the salmon cream cheese.

    Mix everything well.

    Grind a little black pepper depending on whether you want the pasta more or less spicy.

  • Finally, add the two caviars, the red and the black.

    Do not stir, but toss the pasta in the wok, because the eggs are so delicate that they can break, losing their crunchiness.

  • Serve very hot on a flat plate.
