Pasta with Flat Bean Pesto.
Today I want to delight you with a wonderful first course.
Mezze maniche, after spaghettoni, are my favorite type of pasta, and after trying to make all kinds of pestos, I wanted to try this one with flat beans.
This type of bean should not only be consumed for their exquisite taste but also for their extraordinary nutritional value.
They are high in plant-based proteins that make them perfect as a meat substitute, and they are rich in fiber, potassium, magnesium, iron, phosphorus, vitamin C, and K.

Preparation

Traditional Cooking

  • Wash the flat beans and remove the tips,

  • Place a pot with water and salt on the stove, and bring to a boil.

    Once boiling, add the flat beans, and cook for 10 minutes.

  • After the time has passed, drain them without discarding the cooking water, and cool them under running water to maintain their bright green color.

  • Peel the garlic and chop the parsley.

    If you like, add a chopped chili pepper.

  • Meanwhile, in a pan add olive oil, chili pepper, chopped garlic, and parsley, and sauté for 1 minute, then…

  • Add the flat beans, adjust with salt, and sauté in the pan to flavor.

  • Put the flat beans’ cooking water back on the stove, as this is where we will cook the pasta, and in the meantime…

  • Take half of the flat beans, chop them coarsely, and set aside in a bowl, while with the rest…

  • We will make the pesto, adding Pecorino Romano and a little bit of the sauce that was in the pan.

  • We will mix the pesto with the chopped flat beans, and blend them. If you like the mixture more liquid, you can add a little bit of pasta cooking water,

  • At this point, we will drain the pasta and pour it into the same pan where we cooked the flat beans, add the pesto and flat beans, and toss on the stove for 1 minute.

  • We will serve immediately.

  • Add extra virgin olive oil and the cooked flat beans. Place the splash guard on the lid of the bowl and set High temperature

  • Take half of the flat beans, chop them coarsely, and set aside in a bowl, while with the rest…

  • We will make the pesto, adding Pecorino Romano and a little bit of the sauce that was in the pan. 20 sec speed 10.

  • Collect with the spatula and combine with the flat beans you had set aside earlier,

  • At this point, we will cook and drain the pasta and pour it into a pan, add the pesto and flat beans, and toss on the stove for 1 minute.

  • Serve immediately.
