This dish has a summer taste, as these beans are harvested between June and July and in some less sunny regions also in August. They are increasingly rare to find, in fact, supermarkets do not sell them, but small greengrocer shops do. I am fortunate to live in a small area between the sea and the hills, making it easy for me to find them. They are characterized by being up to 16 inches long.
Today I present to you a dish from my dear grandmother Maria. I will prepare them with Pachino tomatoes, spaghetti, or linguine.

- 1 cup tomato purée (rustic or diced)
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- 6 leaves basil
- to taste salt
- 4.6 oz pasta

Preparation of Pasta with Snake Beans or Paesanella
These are the typical snake or paesanella green beans. Wash them, and remove the ends just like you would with regular green beans.
Bring a pot with plenty of salted water to a boil,
Once boiling, add the green beans, cover and let cook for about 10-12 minutes.
Then drain and cool with cold water.
In the frying pan, add the olive oil and chopped garlic and let it sauté for 1 minute.
Once the garlic is sautéed, pour in the diced or rustic tomato purée,
Add a small pinch of salt, and mix.
In the meantime, you can set a pot for the pasta on the stove.
Let the tomato cook for 3 minutes, then add the green beans, mix and continue cooking for 2 minutes, then turn off the heat and add the pasta.
Add the pasta to the pan and stir over high heat with plenty of basil leaves.
Serve hot. Here is a good dish of pasta with snake beans or Paesanella ready.

put 250 g of water in the mixing bowl,

Pour the contents of the bowl into a soup tureen, then drain the pasta and mix it with the green beans, adding plenty of basil.
