- 1 clove garlic
- 1 bunch chopped parsley
- 2 tablespoons extra virgin olive oil
- 2.1 oz bacon (or guanciale or ham, diced)
- 3.5 oz stracchino (or other creamy cheese of choice)
- 10.5 oz pasta
- to taste salt

Steps
To make
Preliminary: wash and trim the zucchini, then cut them into small cubes and set aside.
Put the water for the pasta on the stove, and in the meantime,
in a large pan put the oil, garlic, and chopped parsley. Sauté for a few minutes without browning the garlic too much.
At this point, add the zucchini,
and after five minutes, add the diced bacon, stir and cover with a lid.
Let it stew and stir occasionally. If needed, you can add a little pasta cooking water.
Then turn off the heat and add the stracchino. Stir to combine.
As soon as the pasta is cooked al dente, drain it, leaving a little water aside if necessary.
Transfer all the pasta to the pan and stir everything together off the heat.
Here is the pasta with zucchini, bacon, and stracchino, serve hot with a grind of pepper.
Put the water for the pasta on the stove.
Add garlic and parsley to the bowl. Chop for 10 sec. at speed 8.
Scrape with the spatula and add the oil and bacon.
Sauté for 3 min. at 230°F reverse with the basket instead of the measuring cup at speed 1.
Add the diced zucchini and a ladle of pasta cooking water and cook for 10 min. at 212°F with the basket instead of the measuring cup reverse speed 1.
Add the stracchino and mix for 1 min. at speed 2 reverse.
Pour the mixture into the pan and add the pasta.
Stir, add pepper and serve.
