- 7 oz peach
- 1 tbsp cornstarch (or FiberPasta flour)
- 0.7 oz brown sugar (or 1 oz erythritol)
- 10 cookies (dry or low glycemic index)
- 1 packet vanillin
- 3.4 fl oz water
- 1.8 oz sugar (or 2 oz erythritol for the gelée)

Steps
To prepare the
Wash and cut the peach in half, remove the pit, and then make very small cubes.
Place them in a small pot with water, cornstarch, and sugar. (or with FiberPasta flour and sweetener)
Cook, stirring, until the sauce reaches the first boil and becomes thick, transparent, and shiny. It will take about 10 minutes.
Let it cool, stirring occasionally, and set aside. Below is the consistency you should achieve if the peach is very ripe; otherwise, if the peach is less ripe, it will retain the classic cubes.
Prepare the Greek yogurt cream.
Place the yogurt, sugar or sweetener, and vanilla in a bowl.
Mix with a fork or spoon until the mixture is homogeneous and the sugar is dissolved.
Crumble the cookies in the mixer
Transfer the cookies to a bowl and add a few tablespoons of yogurt. Mix.
Assemble the cups.
