- 3/4 cup peas
- 3 tbsp extra virgin olive oil
- 1/2 cup pearled barley
- 2 slices cooked ham
- 1/4 cup Parmigiano Reggiano DOP (grated)
- 4 cups vegetable broth
- 1 tsp stock cube (Homemade vegetable)
- Black pepper (ground optional)

Preparation of Pearled Barley with Peas and Ham
If you have fresh peas, shell them
Weigh 100 g, already shelled, or use frozen ones.
Peel and then chop the onion, put it in a pot with the extra virgin olive oil, and sauté for 2 minutes.
Then add the peas, and put twice their weight of water.
Add the vegetable stock cube, if using commercial one, put half a cube. Cover and cook for 10 minutes, meanwhile….
Choose the barley,
Put another pot on the stove with lightly salted vegetable broth, add the barley in cold and cook for 3/4 of the time indicated on its package.
After that time, add the cooked peas. and finish cooking.
This last phase should be done without the lid, stirring occasionally. Then turn off the heat and..
Add the finely chopped ham,
Add the grated Parmigiano, and stir with a wooden spoon.
