  • 14 oz cauliflower (purple)
  • 1 clove garlic
  • 3.5 oz penne rigate
  • 1 chili pepper
  • 1.5 tbsp extra virgin olive oil
  • to taste salt
  • 2 leaves bay leaf
  • 0.7 oz pecorino romano (grated if not vegan)

Preparation: Penne Rigate with Purple Cauliflower

Traditional cooking.

  • The first thing to do is to choose a nice fresh and firm cauliflower.

    It can be of any type, from white to green, to purple, but you can also use Romanesco cabbage.

  • Remove the outer leaves, and trim it.

    Then wash it several times under running water, as there may be some unwanted insects hiding among the tops.

  • Put salted water on the stove with 2 bay leaves.

    Bring to a boil, and add the cauliflower.

  • Let it cook for 15 minutes. Once cooked, the cauliflower will turn green.

    Meanwhile, in a pan, put a drizzle of EVO oil, peel and chop the garlic, and the optional chili pepper.

  • Let it fry and set aside.

    After 15 minutes of cauliflower cooking, throw in the pasta, and wait for it to be cooked al dente.

  • Drain very well, as this dish tends to retain the cooking water.

  • Pour water into the bowl, place the Varoma container and arrange the cauliflower inside it, close with the lid and cook: 25 min./Varoma/speed 1. Once cooked, the cauliflower will turn green.

  • Carefully remove the Varoma. Empty the water into a pot, dry the bowl, and arrange the vegetables in a pan.

    Put the pot with the cauliflower water on the stove, and if necessary add more, you will cook the pasta there.

  • Put 1 garlic clove and 1 chili pepper, some parsley stems in the bowl, chop for 8 sec. speed 7. Gather with the spatula.

    Pour in the extra virgin oil and, flavor: 3 min./120°C/reverse/speed 1
